Every time the weekend rolls around and I’m heading to friends houses, I grab a few bags of our Crunch cookies (or the club-sized containers that we sell at BJ’s Wholesale Clubs) to bring along. Sometimes (if I’ve actually planned ahead) I have some of our cute decorated ones, too. Grabbing bags is quick and easy, but I was very excited last week when Amanda, the baker-cook-foodie-photographer from The Happy Little Apron, created a delicious and simple recipe using the cookies as an ingredient instead. I’m pretty certain this is going to be a summer go-to this year: Crunch cookie + whipped cream sandwiches!!
Amanda lives in the Pacific Northwest region of the US; she’s a Whole Foods shopper so she grabbed a few bags of cookies there. (P.S. BIG NEWS! Crunch cookies coming soon to all PDX Safeway shoppers.) Then, she took a few cookies and scooped big puffy pillows of whipped cream to make her own sandwiches. Genius! She used our chocolate chip and double chocolate cookies (which would probably be my top 2 choices for these, too) but you could use any of our other flavors. Imagine our lemon-ginger or orange creamsicle cookies? Yum. I bet any of the sandwiches would freeze well, too. Amanda definitely has an eye for food-styling and photography because she created and took this gorgeous picture to share, too. Thank you Amanda!! If you want to make your own whipped cream, here is a quick recipe by the pros at Cook’s Illustrated . I also kind of love the idea of bringing several cans of whipped cream with the cookies, and letting everyone make their own sandwiches. Either way, you can’t go wrong; it’s a fun idea and I’m excited to give it a try!
