Why take the risk? Why cookies? Why nut-free? All of these questions ran through my mind as I drove to my sister’s house in Richmond Virginia, in 2003. Some of those questions I have the answer to and some I am still trying to figure out. The easiest way to start my story is to take a quick look at my childhood. Some of my fondest memories from growing up include my grandmother and me baking together in her kitchen while listening to Pavarotti – for those of you who don’t know him (most of you probably do not) he was someone who could either make you want to fall asleep or dance in the kitchen. We would spend hours rolling dough, cutting out creative shapes, and laughing. The result of all that hard work, you ask? Well that’s easy- the result was the most flavorful, crunchy, cookies. So, after graduate school, when I decided it was time to take my life in a new direction, I looked towards what had always made me happy: baking cookies.
Onto the next question, why nut-free? Well, that is a little more difficult to answer, but here goes… I have several friends who have food allergies and knew that they never experienced the pleasure of biting into a crunchy, warm, gooey cookie. I started doing some research about food allergens and learned that allergies to nuts is one of the most common. After learning this I ran with the idea and started playing around with recipes to see if creating a delicious, nut-free, fancy cookie was even possible. Well turns out it was harder than I thought So, I enlisted my own personal culinary expert -who later became my husband – and we created a cookie we were both proud of.
Now why take the chance? Why take the leap of faith? Why leave a good job and put it all on the line? This is a question that I still sometimes ask myself, but the best way to answer it is to say that I wanted to be my own boss, make my own decisions, create something I could be proud of, and most importantly – laugh. I wanted to be excited to go to work in the morning and not want to go to bed night because all I was thinking was..you guessed it, cookies.
Cookie recipe, check. Risk analysis, check. Now, it was time to pull the trigger, so to speak. And that is exactly what I did. In 2004, Fancypants Baking Co, became the first peanut and tree nut free baking company in the nation. One year later, after hand delivering trunk load upon trunk of cookies to local, Boston-area businesses like Roche Bros. supermarket and City Feed & Supply, the time had come to move the business from our tiny Boston apartment to a 1,000 square foot commercial facility. With Justin now on-board,, our life became all things cookie! We have grown since that time and now are sharing our delicious, nut-free cookies with customers all over the country. Every day I think to myself about how far we have come; and I am proud that the same love and dedication is still given to each cookie that leaves our facility today!
